    There is a flaw in your reasoning here. How do you know the alpha acids have not been dissolved? Because no bitterness is added? I bet they have been dissolved, but that the have not been isomerised. Isomerisation happens during the boiling of the wort, and isomerised alpha acid is the bitter...

    How much wort did you pitch on? I find with 23 liter batches of pilsener i need a well aerated starter. From what you're saying I'm guessing you did not get enough oxygen in the wort with the splashing, and that there were not enough yeast cells to get it going all the way. I made the same...

    I expected it to be quite sweet, but was pleasantly surprised by the tartness. SWMBO loved it. Never expect cloudy beer from MSB as they pride themselves on clear beer.
