Southern X is an extremely dank and typically NZ hop like, but on the extreme side of AA, my personal opinion is to ONLY use it as a bittering hop, i made an IPA with only southern X, its just the worst :) but its 9.0% and does the trick. Im very keen to see how you go with it. good luck :)

i seem to recall these having a slam shut gas cut off, once they trip they are a throw away item. and expensive, but yes SAFETY FIRST i run a manually lit pilot light and run 1/2" gas solenoids connected to my BCS-462

this was supposed to be a proof of concept, so i could make sure it worked and then i would re-wire it......40odd brews later its awesome.....but im very close to a complete rebuild and rewire

do you completely drain out the esky for you first runnings? refill the esky, stir up the mash, recirc and drain completely for second runnings continue... - Also what is the gravity of the first runnings? are they around 1.075?

i made a Southern Cross 13.8% Imperial IPA.......horrible, horrible hop.....great for bittering..nothing else :) NOTHING ELSE!!! hahahah all the rest are fantastic....bit of a risk of the NZ'DANK!
