    That's a REALLY long time. For an average gravity brew the ferment should be almost over by day 5, at least in my experience.

    I still don't properly follow - I had assumed the companies in question (Fermentis, Lallemand or whoever) didn't approve, or they would provide the yeast in smaller quantities themselves. But unless I'm missing something there is nothing stopping a retailer from re-packaging from a 500g brick...

    Yes and no. Those spec grains can be steeped, but wouldn't make anything in the way of food for the yeast. And the steeping liquor still needs to be boiled. Just use malt extract or a properly mashed and boiled (and cooled!) wort next time.

    See my post above; get in contact with either of those two breweries, I'm sure they will have more to say than "...I used it one time in a kit brew years ago..." They've used it commercially. In all-grain beer. Properly.
