    That's weird, Oktoberfests aren't usually a wheat beer. Most of them these days are just stronger Munich Helles.

    Another great starting recipe is the legendary DrSmurto's golden ale. It's really good as a starting recipe to tweak to your exact tastes, an example of which is stu's suggestion which would be DrS's with the Munich replaced by Pilsner.

    I would just pitch on the cake, it's just like you've done an extra big starter. There will be plenty enough viable yeast to do a bock.

    Im wondering why that might be the case? I thought it might have something to do with mash ph, but in a water calculator even doubling he mash water didn't move the ph much (17l to 30l went for. 5.2 to 5.27).

    Can I ask what you based your temp/time schedule on? The lower sacc rest seems a bit short, then there's one in the middle that most don't have.

    Not a lot of biscuit (cookie) going on in there, maybe add some Victory or a medium Crystal to add sweetness or some oats to get a creamy body

    Wheat beer (hefeweizen) tastes a bit thin?

    Is it under-carbed? I found even with a dry finish, if the carbing is highish then it makes up for the dryness. Otherwise maybe aim for more body and a higher final FG, maybe around 1.015. Though your mash schedule should mean should have ended up around there.

    The hardest things with the kids is when they want to help! Yeah I know, if I wanted red I should have gone a smidge of roast barley. I'm sort of looking for an amber IPA. I'm sure it will still taste ok. I can always add some red food colouring ;)
