    Tried cube hopping on few occasions. Didn't find it added much aroma so stopped bothering. The mini boil after chilling is the best of both worlds IMO (convenience of NC and aroma/flavour of late/flame out hops).

    Plus if you build a collar you can mount the digital controller on the face of it... unless you hate the look of it. Adjust temp without opening keezer or fiddling with the thermostat.

    There's also the option to do a post chill mini boil. No late or flame out hops. NC as per normal. Chill NC cube to say 4C. Draw off 4L, bring up to boil and add your late additions (ie 15,10,0 or whatever) as per normal. Strain the boiled wort into your fermentor, add the remaining chilled...

    Did look at these few months ago when I was setting up my keezer... luckily common sense prevailed and I ended up with Perlicks :) Couldn't be happier with the pour and the price wasn't much more than these ebay ones. Anyone tried the KK Perlick knock offs???

    If you're really keen on larger volume... as I've said before just use 2 x bigW pots ... split the grain into each, that should give you the room to use up to 7kg grain and brew either more beer or higher gravity beers.

    Try Wyeast 2112 and you'll have yourself a Viennese Steam Beer :D If I was using 100% Vienna I'd be using a lager yeast (S23 if you want dry, 2 packets).
