    Out of interest, where was the Westy XII recipe sourced? I had one the other night and it was hands down the greatest beer I have had. Liquid velvet of the God's (or at least St Sixtus).

    Fermenting Saison Yeast at a Low Temp?

    I'd suggest altering the starting gravity before changing the temperature. Most Saison yeasts will chew through to <1.005. If you were to start about 1.045, you're already pushing 5% at the very least. The higher gravity will push esters and alcohol flavours, which is what I gather you are...

    Forgive me if I'm wrong, but isn't a JAO a Metheglin? I entered my JAO as that last year with good results. Just sayin'. Edit - just checked the guidelines and Metheglin is an 'Other Mead'. My bad. Back into my box. Yellowbox, that is. :)
