    Thinks........ Particularly suited for producing 19th century-style West Coast beers. Retains lager characteristics at temperatures up to 65 F, (18 C) and produces malty, brilliantly clear beers. This strain is not recommended for cold temperature fermentation. Steam beer he we come! :D

    Thanks for those figures butters. That calculated abv is a bit low for me, and as I keg (no priming sugar), I will have to add some dex to up it to around 5.5 - 6. All I gotta do now is wait till we get another $9.60 a can special at the local IGA. cheers Dave

    Easy Vinegar Fly Trap. Get a 1 litre soft drink bottle, cut it in 3/4's, the 1/4 being the top half - er quarter. Invert the top into the bottom to make a funnel type thingo. Put some nice stale beer in the bottom, replace the top (making the funnel), and voila, your own killing machine...

    Hazza, I do similar to wakka, I got mine set to 90 kPa. That's the gassing and pouring pressure. Takes about a week to gas up, have 2 kegs on the go all the time. The only time it gets a bit frothy is when the keg is about to run out, so I just put up with it and leave things as they are...

    broggo, A pH of 7.2 to 7.8 is on the alkaline side of neutral. If it was discernably acid, the pH would be 6 or below. Yeast prefers an acidic environment to do it's job properly, I usually add a teaspoon of citric acid to the wort when mixing up. Maybe you are tasting the hop bitterness...

    That's good. I tried kegging a lager, but the egg perfume really put me off. It sure does need 'lagering", and a week or so in the keg doesn't do it. If I had more kegs I'd do a properly stored lager, but at the moment ales rule. cheers Dave

    Try a Coopers Bitter. They have a recipe on their site for a "Best Bitter". That's the easiest way of doing it. My next brew witll be a Coopers Bitter, with 500g Saunders Malt :rolleyes: and 454g Tate and Lyle syrup. :o I'll let ya's know how it goes. cheers Dave.
