    You could put a thermowell in the 10mm hole, or a thermometer. I have fermented in cornies under pressure quite a few times.     You can brew a kit at 15L if you wanted too, it will be higher ABV (more alcohol), and higher IBU (more bitter) as it will be more concentrated.     This will work. I would use a stepped drill bit, easily the best tool for cutting larger holes in stainless. You could also just replace the font if you dont already have the tool to drill the hole and cant be stuffed muckign around with it. They are about $35 I think.

    I highly reccomend the submerge test. Hook teh spunding valve up to a regulator and then dunk it in a sink full fo water. If there are leaks you will see them. Just did this in my new keezer gas system and found 3 separate leaks.

    Hey mate, add the grain slowly to the strike water stirring as you go. I have tried both with cooler water around 40c and at strike temp of around 70c. It's much easier to stir the grain into cooler water and it saves time as you can dough in as the temp is ramping. Have the pump running too...

    I have tried getting to the boil at 3KW and then reducing the power a bit to say 2400W, but last couple fo batches I just left it on full blast. It does reduce the vigour of the boil a bit reduceing the power (funny that) but not sure what effect it has on boil off rate. Didnt pay enough attention.

    I hate those clamps. They are secure but are a bugger to get on and off and you can't reuse them. Old school hose clamps all the way.

    The entire tube of the plane is pressurised. That's planes are tubes. It's an easy shape to hold pressure, like a keg or a CO2 cylinder, both tubes. Just take the keg on the plane. It will be fine.

    Looks pointless anyway. The pump just clogs if you try to use it post boil. The pick up for the pump would have been better on the side, not the bottom of the unit. At the very least right at the edge on the bottom. Might work ok if you brew a 15IBU lager I guess. Who's got time for that...
