    When you re-boil it, any bacteria will surely get obliterated. I'm not sure a few airborne cells can convert 30+ litres of wort into a sour bomb in a 24 hour period either. I'd speculate that there'd be some impact when you take a high protein liquid from hot to cold then hot to cold again, but...

    Oops. Starting mash temp too high!

    Update: Took final gravity reading of 1.020. From the OG of 1.089 that gave me an attenuation of 77.5%. The Wyeast 1214 Belgian Abbey I used has a range of 74-78%, which is pretty much spot on. So it looks like that initial high mash temp didn't have too great an impact on the short chain...

    I am not able to help with that I'm afraid. I do mine based on experience. e.g. 6.667g/L for a medium-low carbd ale; 7 g/L for a medium carbd ale; 7.5 g/L for a lager. My guess is your Cerveza will be around the 7.5 g/L mark.
