    I am thinking of getting the kegmenter but was wondering about adding a thermowell for better temp control. Is it really as simple as drilling a hole in the kegmenter and fitting the thermowell? Apart from working out the height location, is there anything else I need to consider when doing it?

    This mash had a lot of that milky **** too after the 45c step. I thought it was flour escaping the mesh bag. When you removed the lower step mashes and saw an improvement, was that for grists with high wheat %?

    Recultured Coopers yeast in a hefeweizen?

    Has anyone tried using recultured Coopers yeast in a hefe? I know it can throw some big banana flavours when fermented at 20C+. The yeast is also pretty low floccing so should make a nice hazy beer. Thoughts?

    Calcium carbonate

    From my understanding, calcium carbonate should rarely, if ever, be used. Generally you want to neutralise alkalinity, especially for lighter beer styles. If your water is low in calcium content then an addition of calcium sulphate or calcium chloride would be more beneficial. These will help...
