    Vic July 2012 Caseswap!

    Funnily enough, our brew session lengths haven't increased (if anything probably got shorter), but last brew day (at Easter) saw us pump out around 500L in around 12 hours (mash-in to cleaned up). Two brews in a day... that's just a regular brew day for me :rolleyes:

    Get an auto-siphon, you won't need to use a heap of gas to push the beer, no real potential for mishap and no greater level of oxygenation than normal transfer processes. Also easier than using a standard racking cane as the siphon is created for you. Brendo

    The issue I would see there is by having the filter in there and forcing the beer through it at serving, you would have a shiteload of neucleation points to break the CO2 out of solution, flattening the beer. Also, seems kinda counterproductive to me as the act of randalling the beer is...

    With a beer this big, pitch size for proper attentuation is going to be pretty important. The alternative is to repitch the yeast from a smaller beer - I often do this with my bigger beers to ensure super healthy and plentiful yeastie beasties.

    Vanilla, When To Add

    Last years collaborative brew with Fourstar, CM2 and Maple saw us brew and imperial vanilla stout. We used 1 fresh pod/20l of wort in the kettle, cube and fermenter. We simply split the pods and scraped the seeds. Came up with loads of vanilla flavour which really amped the choc profile. Yummo
