    Hi Dave if your fridge is stuffed, you should think about a freezer for your next brewing 'fridge'. They easily can got below 2 degrees!(while not working as hard as a fridge). Good luck! I'm sure it will till taste good!

    From what I understand the extra time in the primary, also means more yeast doing the cleaning up/condition, therefore a cleaner/faster aging occurs. Anyone with more knowledge than me is free to correct me!

    Good luck, sounds like your on the right path! As mentions, its best not to have such a long time before pitching the yeast, but it's done now. chill water next time and brew below 20 for a cleaner larger'ish' style, to better suit the missus. Id recommend the cerveza brew with the cascade...

    Like everyone has said, Get a fridge and an stc 1000. You won't regret it. Set and forgot almost. Takes alot of the worry out of the fermentation process, no matter what time of year. Fridge + stc 100 + heat source means more time for planning next brews!

    Coopers Mexican Cerveza

    The combo I put down with the 25g of Cascade dry hopped, was the Cerveza can, 100g dextrose, 125g dark spray malt( had it lying around) and 250g maltodextrin, and kit yeast, came out at about 3.9% ABV.

    Just an update. Day 14 and Gravity reading is 1.014. Have dry hopped for a week now as listed above. Nice hoppy flavour, from the hydrometer sample. Let the cold crash begin!

    Thanks for your reply guys. this is all good stuff. I like the idea of brown sugar and honey. I think I shall have to add these two. the increase volume to 25L ( vs 23 or less) is interesting too.

    I can definitely recommend dry hop with 25g of cascade. I did it and the results went down well with me, and a good handful of my mate's.

    Double GPO on a STC1000 setup?

    Just my 2 cents worth, a recent bought a skirting double gpo, because each socket could be wired seperately ( I'm a sparky) that said on my second setup I bought 2 panel mount sockets, as they were much cheaper.
