    I've found these taste better with age. 2 months plus in the bottle. Adding fresh quality juice improves them to, but adds more cost. Still worth it in my opinion. Very easy reliable kits.

    You'll be fine to leave it. I leave mine in the primary for 3 weeks total including cold crashing, ( I don't do secondary) just dry hop as soon as you get the chance!

    Sanitary DME?

    I tend to put all remaining fermentables in at the end of the boil to dissolve it and sanitize,(can goop included), before chilling down to 20 odd degrees and tipping into the fermenter. It's not hard as long as your pot has the extra room, and will mean you can buy in bulk, with peace of mind!

    Indeed its fast and very clean, especially at 15 or 17 degrees(clean), BUT, it does strip out some of the hops flavour. That is the only reason I didn't suggest it. Nottingham and US05 are my favourite yeasts.

    As above.Once you've steeped your grain, you need to remove the spent grain and boil the liquid for sanitation reasons, so why not make a hops addition while your doing it?
