    Boozy and sharp could be fusel alcohols, due to stressed yeast. If it is, the only fix I’m aware of is time. Bottle it and put it away for another 10 months and see how it goes…

    Good to hear! If it were me, I’d do the lagers first. One pils and one doppelbock with one lager (if dry yeast, w34/70), then the other pils and doppelbock with a different yeast (maybe S-23?).
