    Given the underpitch of 1 packet of US05 in 25 litres of wort, I think 4 days to FG is entirely reasonable. I don't see there is anything of concern here.

    Agree with MHB. I love WFMB. My most recent batch using this is a Hefeweizen, and it's the best one I've made since I started brewing 16 years ago. I can't compare it to the other malts, as I haven't used them.

    If it's still the same SG tomorrow, go ahead and bottle. It won't be a true lager, as you won't have lagered it but. hey, it's what I did for my first brew 16 years ago.

    Ginger Beer Question

    Known as a Toucan. Never done it myself, but is is quite common to use 2 cans to brew a Stout. By all accounts, it works really well. Whether it will work for GB, I don't know, but what do you have to lose? You can always dilute it in the glass if the flavour is too much for you.
