    Refractometer Readings

I calibrate my refractometer with distilled water before use to ensure that it is reading zero correctly. I would also calibrate against a decent hydrometer for extra assurance too. From what I learn most modern refractometers take into account the temperature of the sample but if yours...

    Tweaking saison colour

Thanks for all the replies. Cant really be bother boiling X amount and then adding back so just really looking to add a bit of something to influence the colour without affecting the taste too much. Was planning on a SG of around 1.045 - 1.050 cause dont want it too high due to high...

    Tweaking saison colour

Hi, I will soon be planning to make my first saison and I was wondering how to get a lovely orange hue to this. I have Dingemans pils as my base malt but was a bit stuck when it came to the colour. Farmhouse Ales indicates there are some that use amber malt, do you think this is the way...

Wine kits - worth a go?

I made a red wine kit and for some reason it was crap. Didint taste the best and didn't age very well either... However I have made this a couple of times - http://forum.craftbrewing.org.uk/viewtopic.php?f=18&t=454 and it turned out quite nice. A bit like a reasonably priced bottle of white...

    Uses for Citric Acid?

Can also be used when making candi sugar which may be more exciting than using it for cleaning.

    California common carbonation volumes

Hello again ladies and gents. I previously enquired about pitching rates for this beer style now I am here for thoughts and opinions on carbonation volumes. BYO is telling me to aim for three volumes for this style but this seems kind of fizzy hefe/ Belgian beer type of carbonation. Has...

Feedback wanted on my first brew

I found my first brew was average but once I got better at brewing the beer obviously got better. The thing I like about brewing is once you have mastered something you can then focus on something else and keep learning. Once you have got your brew day nailed you'll then start worrying about...

Feedback wanted on my first brew

Do you know what? Hitting your numbers on the first brew is not the be all and end all. It took me at least 4 brews with brewmate to start hitting my numbers. Just be happy that you made something drinkable rather than paying for crap beer. Know your equipment and you will go far. Once you know...

Just an update. Used 2.5 litre starter in 1.051 wort and was away within 6 hours. Quite impressed. Am on holiday at the moment so hopefully will be done when I get back.

Starter for califonia common and wyeast 2112

I have a few calculators available so thats ok but thanks for the offer of the spreadsheet. My main problem is do I class this as an ale or lager pitching rate. Sorry if this doesn't make sense...

Starter for califonia common and wyeast 2112

Yeah a starter wont hurt and it was the plan to do that anyway. My question is more around pitching rates for this yeast as I believe it is kind of a hybrid lager/ale yeast. Do I need a lager size starter or can it be more a standard starter....obviously depending on MFG dates etc....

Should I add more yeast at bottling?

It had a bit sugar in it to assist in the attenuation and make sure it wasn't too heavy. My thoughts are that after working so hard the yeast may be lazy so therefore more yeast added at bottling will ensure good carbonation. its not so much yeast thats left after fermentation but the state of...

Should I add more yeast at bottling?

All, I have made an imperial IPA which has gone from 1.078 to around 1.015 after two weeks in primary. As there was a load of trub I have racked to secondary where I have done a diacetyl rest (ringwood yeast) and I am planning to cold crash and then clear with gelatine and polyclar. I still...

Hi all, Am planning on making a california common in a couple of weeks and will be using wyeast 2112. OG will prob be around 1.045 - 50 and will aerate with acquarium pump and ferment at 16c. Do I still need to create a massive starter as per lager or as this is a bit of ale/lager can I just...
