I've brewed an AG RIS with 250g of ground coffee steeped after the boil (70deg) and another 250g cold brewed and added to the fermenter close to FG.
Double bagged both times to minimise grounds entering the final beer but I've noticed quite a lot of grounds in suspension after 30...
As mentioned already, give them about 4 weeks. If they're not fully carbonated by then you have a problem. The solution is simple, if you're impatient and want to be drinking beers inside of a week after bottling then don't cold crash.
You could even cold crash the individual bottles after...
Belgium strong dark ale, only four weeks in the bottle after massive cold crashing, still needs a lot longer but coming along nicely.

Been off site for 5 days come Monday due to an engineer who is rooting around with what should be a simple solution to bridge a tilt panel join where my car lift rail brackets need to be. Join should not have even been there to begin with.
Why is it always the simple things that take the longest?
I believe the theory is if you are adding hops near the end of fermentation then there will still be some co2 production to drive any air out of the fermenter that happens to get in. Minimising the risk of oxidisation.
The trick is to time it right, too early and excessive co2 production can...
Not too sure about VB kegs going for $250?
About 5 years ago I had a two tap glycol system at home and ran 50ltr kegs for parties. Obviously before home brewing started. Cheapest I ever got a CUB keg for was $190, other times $200.
Currently sitting at 1.017, just a tad off the predicted fg of 1.013.
Think I might leave it another couple of weeks and take another reading just in case it's gone sluggish at the end. Still some very very slow activity which could just be left over co2 coming out of solution.

Prost Weizen by Brad Smith, still a little fresh (bottled) but tasting great. Whirlfloc to boil, no CC or finings, nice and hazy!

I'm running two in a biab keggle, bought them from ebay second hand while they were currently out of stock at keg king.
They still work, touch wood.
One had a black + dymo label on it and the other a boil label. Wonder if they ever belonged to someone on here?
