    yeah what I did this time was steep and then boiled. my theory was that i would squeeze out all the flavour, considering how old it was, I was pretty happy with the result. will let you all know when i do a taste at 4 weeks, 8 weeks and 12 weeks.

    Thanks for all the replies. This sounds good, pale ale x2 and 750 LDME. I'm with you the real ale has the perfect bitterness for me. The plae ale is not as bitter, but I would think that a toucan pale ale maybe a tad on the bitter side. That said, maybe i'll give it a crack and let you know. Quachy

    Honey To Prime When Bottling

    Certainly does. Cracked open a pale ale bottle primed with honey tonight. Had a beautifully sweet honey aroma from start to finish. Taste wise, only a hint of honey flavour and not sweet as the aroma would suggest. Quachy

    For each batch of beer I bottle, I usually do about 1/4 with honey instead of carb drops. I put in about 1/4 of a teaspoon. Honey has about 20% less sugar than cane (correct me if I'm wrong anyone), so I go with a heaped 1/4 teaspoon. No explosions so far and yes there is a nice honey flavour...
