put the brew down yesterday, i used a saaflager yeast. about 21lt and 11.5g yeast. used 500g ldme 500g rice malt and 200g wheat malt. just wondering what sort of time frame i will be looking at for bottling if i keep the fermenter at around 18C. trying to get it down to 15 but seems almost...

well i had a quick look at the brewcraft calculator and it reckons with what im adding (left out im adding 200g of wheat malt for head retention) it reckons i should hit roughly 5.6% alcohol but i doubt whether all the sugars in the rice malt are fermentable so i should be pretty close to the 5%...

not too worried about the chilli's, but i would really like to know about the amount of sugars i need to get it to around the 5% mark.wondering if 1kg light dry malt and 500g rice malt should do it? oh and the rice malt i get from coles it comes in a jar like honey and is in the health food section.

would it be 1kg of ldm, i would like the beer to have a bit of a kick, i was even thinking of chucking a few chillis in a dozen or so mexican fire water????
