    Do You Think There Are Enough Hops In This Brew?

    Sly Fox Brewhouse Co in USA had a tasting recently, and on offer was their Oddysey Imperial IPA, using 11 hop varieties. I presume that this was mainly for novelty value, as I imagine that many varieties would blur into each other? (I highlighted the Rt 113 IPA just to show the varieties they used)

    Go with the Coopers kit as it has everything you initially need (ignore the DVD), and brew it so you know what the base level is. You'll be reasonably satisfied with the result because you made it yourself. Then visit the LHBS and get a better kit (eg Muntons) an enhancer pack including hops or...

    Boiling Grain

    My Brewcraft LHBS "expert" advised me to boil crystal for 20 mins. It didn't sound right to me, so I used the same principal as the TCB wetpack I brewed a few weeks ago, and steeped in 65C water, rinsed and added 5 mins before end of boil.

    Noob's Chocolate Stout

    After 1 week in primary I couldn't detect any chocolate flavour, so I added 25ml of cherry brandy essence, and 25ml of chocolate essence. I now have a Cherry Ripe Stout! After 1 week in the bottle it is ok. It's nice, it's different, it's unusual.

    Put down a toucan of MSB Two-Row Lager this afternoon, the yeast packet supplied reads "Lager Yeast", yet the directions state brew at 18-24 degrees. Isn't this too high for a true "Lager" yeast? :unsure: Brian

    Hey Dan, Had a sneak preview last night at room temp (after 10 days secondary carb) . Coarse bubbles - head didn't last long. Very Hunny - Winnie would approve. Maybe Coopers were right when they called for 325g (instead of 500g). Anyway, might be better in a month or so (and served cold!)...

    Hi Dan, I've just brewed the same recipe, but with 500g of honey (I'm not sure what difference that would make, but I thought I'd just use the whole jar). Primed with 1 tsp of white sugar per longneck. Will let you know results in 10 days. Brian
