This week we poured the slabs in four stages and all plumbing and electrical is roughed in. This is a major milestone for the project, both physically and psychologically. The power upgrade to 120A 3 phase is complete and gas (for kitchen) has been connected to site., We used 300mpa concrete and...

Stalled fermentation or high mash temp?

The only way to be sure if your beer has attenuated properly is to do a forced ferment test. This will tell you the maximum attenuation your wort is capable of. Google it, but basically you take some wort, add a larger than normal dose of fresh yeast, put it on a stirplate and keep fit warm, and...

The name is on the front. I hear you but have full confidence in my branding team. They are a very experienced team and know what they are doing. It is just one element of the branding. The matter was discussed but I am not a branding expert so can't tell you the why's and wherefores. I have to...

Hi brewers. I have been busy of late and thought I would share my brew dream to open a brewpub, Nice Guys Brewery and Bar, in Richmond, Melbourne. As background I am a scientist and most recently CEO of a private company working on Alzheimer's disease drug. I recently decided on a 'tree change'...

Help - so I accidently got detergent in the pre-boil wort....

My homemade PBW is 70% percarbonate and 30% metasilicate. EDTA is not a surfactant but a chelator to reduce calcium scaling at the high cleaning pH. I haven't found a cheap source of EDTA or found a powder surfactant. Luckily Melbourne water has low calcium and a couple of drops of dishwashing...

Help - so I accidently got detergent in the pre-boil wort....

I understand this may be the case, just trying to keep the record accurate. BTW when cleaning I always add a couple of drop of dishwashing detergent to my homemade PBW and then rinse well and haven't tasted any remnants in my beer.

Help - so I accidently got detergent in the pre-boil wort....

Never use a detergent?? The reality is that most formulated brewery cleaning products such as PBW and no-rinse sanitisers include a detergent to make them work better.

Brewtan B and Green Strike Water

It would seem that high MW tannic acid forms colour compounds when it binds iron or copper. I guess this colour change is a sign that it is doing its' job, but is a little disconcerting. Regarding LoDO brewing I did a side by side comparison using conventional brewing and the loDO technique for...
