Zero alcohol beer

Hi guys ,as you know most of us love a beer,
I'm no different ,but of recent there's been a lot of zero or near zero beers come into the market and some are quite good,
I would like to convert my own ,
I've found the best way is to cook the alcohol out in the boiler placed in an oven at 180f
That's ok but can anyone tell me how much yeast I should pitch for bottling carbonation

I would say look at a Coopers Pale Ale and use that as a guide. Don't forget you're going to have alcohol in it by adding sugar to prime the bottle.
