Since it's getting near to Xmas I thought I'd try a spiced Xmas Ale. It's based on an amber ale Doc posted a while back (a JS clone):

2.25kg B&B Ale Malt
2.25kg CaraMunich Type I
0.50kg CaraFoam/CaraPils
0.25kg Caraaroma
0.25kg wheat

plus:

cinnamon
cardamon
vanilla bean
cloves
grated orange peel

then:

30g Willamette mash (Pellet)
30g Willamette 60 min (Pellet)
20g Willamette 10 min (Pellet)

Wyeast 1056 American

Currently about to come off primary when I will add some more spices then secondary for a week or 2 before bottling. Smells just like plum pudding at the moment. Maybe not the most appropriate style for an Aussie summer Xmas but should be really nice by winter time. Yum.

Anybody else made/thinking of making a Xmas brew?
 
I bottled a hefeweizen a few days ago, and just finished bottling a dark version (dunkenweizen?), should be good for the Boxing Day backyard cricket match. Not really traditional Xmas beers, but they are for Xmas consumption.

Next year, I hope to be taking a portable keg system for the Xmas get together :)
