i'm looking for a quick bit of insider info on wyeast 1098.

What temp should I ferment at for a porter?

The website says 18-22, does anyone know which end of this range would be best?

20 give or take a couple of degrees.

Lower temp might make it a little 'cleaner' where as at higher temps more fruit flavours may be produced.

...and dont take it off the yeast too soon, JasonY and I found it to be a big diacetyl producer.

thanks for the reply guys, i'll shoot for the middle and see what happens. I'll give it a couple of weeks on the yeast too.

Considering its similar to S04 safale be scared, be very scared of diacetyl

This is my favourite ale yeast; I tend to ferment at the lower end 18c as it give a cleaner product IMO. As for diacetyl never had a problem with this yeast, dont take it of the yeast to early.
