1. Okay I understand now about the setup you suggest. I guess my only "paranoia issue" is that I don't mind the plastic drums being used for heating only hot water or temp storage (5-10 mins of wort) but I dont yet feel comfortable to mash for 1+ hour in a plastic drum. Same with no-chill, kind of doesn't sit right with me. Naturally I am not going to cut any holes until I decide not only what is fairly convenient but also mentally/emotionally sound but I am definately taking your consideration on board. :)

what's the diff between mashing and storing hot water or heating water? lots of brewers use plastics look at the number brewing using eskies for mash tuns!

The HDPE used in your drums is food grade - lots of food products use this plastic in their manufacture, storage and transportation. Do you buy milk in 2l plastic containers? yes they are made of the same plastic. Ever taken drums of water away camping - yep, they are made of the same plastic.

HDPE info here http://www.dynalabcorp.com/technical_info_...olyethylene.asp Note the comment "Excellent for any food related products, FDA, NSF, and USDA approved for direct contact."

I understand your concern re plastic, but I'd be more worried about the use of plastic wrap over food heated in a microwave.... have a read of "The Feminisation of Nature" http://www.amazon.com/Altering-Eden-Femini...y/dp/0312243960
