I have a no-chill cube of wort that has been sitting unopened since June 2012. How would I establish if this is still safe to ferment, or more importantly, safe to drink after fermenting?
 
Taste it and smell it. If you've done any brewing before/after this, you should know what good, unfermented wort tastes/smells like?

Actually probably smell it first.... :)
 
If it hasnt swollen up and exploded I would say its perfectly fine
 
A few people here have had cubes for 1-2 years with no adverse affects.
 
agreed, I have left a few brews in a cube for an extended time before brewing and they were all fine - as long as it was well sealed so O2 can't get in, you should be fine. The one qualifier I would put on that is that generally I only do 60 min additions when cubing and do most of my late hopping during/post fermentation.
