WLP023 - Burton Ale in a Red Ale.

Hey All,

So I'm brewing a version of Jamil's Red Ale:


74.5 Pale Malt(2-row)
3.9 Victory Malt
7.8 Crystal 40L
7.8 Munich Malt(light)
3.9 Crystal 120L
2.0 Chocolate Malt

With Magnum, Cascade and Amarillo Hops.

Now I was originally going to just brew it with US-05 or something similar but I've been given some WLP023 - Burton Ale yeast which I wouldn't mind using. Would this yeast work ok with this brew? Would it be better to maybe swap out some of the US hops with English Style Hops? I have Northern Brewer, EKG and Fuggles.

Anyhow, any imput would be greatly appreciated, cheers.

Mmmm burton ale. I think it'll work well with uk hops. It can be estery at higher ferm temps, and it can be a tricky yeast, but produces very nice beer.

Oh I've also got some Hallertau hops, but not sure how that'd work.

Edit: also, I've never used the above yeast - what sort of fermenting temps should I be using?
