Quick question. Is it normal with all Whitelab yeast to pitch your yeast at a higher temp to fermentation temperature (especially with lagers). My mate bought some Mexican Lager Yeast which said pitch at 70-75F (~21-23C) then on the website (www.whitelabs.com) it says optium temp of 50 - 55F (10-12C). Also how fast do you drop the temp (1degree an hr)?
 
If you use the search function, you'll see this topic covered to depth. You'll also see many people telling you not to follow the packet instructions. You can pitch at the fermentation temperature if you make a starter.
