I was taking issue with the statement that isomerisation stops at 72 degrees. When people read something like that they assume it must be based on something, after all it's 72 degrees, not "about 70" . At 72 oC isomerisation declines to about 7.5% of its activity at 100 degrees. At 75 it's about 10%, at 70 it's about 6. IMO that's misplaced precision (one of my pet peeves), I can't see why the cutoff should be at 72.
