Eventually will be putting together an 23 litre extract brew.

1.5kg Morgan's pale unhopped
1 kg Morgans Caramalt
1 kg Light honey
50 g Hallertau hops (45 mins boil)
12g Hallertau hops (Bung in with yeast)

My main question is which ale yeast. I have Safale s-04 and brewcellar English (windsor ?). Which would be best for this type of brew ?

Use the so4, it will bring a drier more quenching finish with that much honey.
4/6 weeks bottle conditioning should see it at its best!

S-04 is very popular with me as well.
my last extract which is an australian Pale ale.
Like them nice and dry in this hot weather.

S-04 is a very nice ale yeast. Have used it with success with Pale Ales.
Not as good as the White Labs Burtons Ale (liquid) but still pretty good.

Good Luck with the brew
