I will be attending a conference in Tasmania in September.
My better half two kids (5&8) will be coming as well.
I own a bakery so don't get much of a chance to have a holiday and would like to make the most of the visit.
 
Camping?

Lagoon Bay used to be bloody awesome, cradle Mountain is worth a look.

North or south?

If south, get down the Huon, it's very nice down there.
 
Not much in Tas that isn't great. Really depends on where you are based and what transport you have available.
 
Tahune air walk, Port Arthur tour. Hobart based.
Franklin river cruise out of Strahan.
Cataract gorge chair lift ride in Launceston.
The kids will love the above,but it all depends where you are based as Manticle posted.
Beer,Cider,Whiskey tours all seem to magically pop up when not expected,strange that.
