Hi guys, another vague question for you!

Mash/boil details

5KG ale malt
200g munich
200g Wheat DME
mashed @ ~67 for an hour
pulled bag out as temp passed 76-78C
beersmith tells me the efficiency was 92% :blink:

Nelson hops at 40, 20, flame out (10mins), and overnight cool in the fermenter

OG: 1.060



This has been a really odd ferment... for me at least (4th batch, first AG)
Dropped 40 points in the first 48 hours
stopped
racked into secondary after 10 days (too much trub)
started again after 24 hours, OG dropping slowly

currently at the 30 day mark since pitching, and its down to 1.010


the Yeast was 2x packs of blank white packets of 'Dried Brewing Yeast'
the only other markings on it are '5G 8196'


how much further will this drop?
 
Hi N87,

With 5.4kg of malt to get a 1060 beer your mash went well at 92% eff, what was the volume? 1060 seems high for 5.4kg.

Without knowing the temp of your pitch and fermentation its a good ferment to get through 40 points of gravity, but leaving it for 30days.....its not going to get much lower and you probably could have packaged your beer at around day 15.

A good clean ferment for me these days will have primary done in 3-4days and then I dry hop and leave for another 7days, cold crash for 2days and then package so its a 2week rotation. Anything more than 5days for primary then something wasnt at the right amount such as pitch rate or O2 levels. If i dont dry hop i can have the beer packaged within 10days, 4 primary / 4 secondary & 2days cold crash.

For your next beer you should look to use fermentis or the Mangrove series yeast and see how they compare to the packet yeast you have thrown at this one.

Temp has been around 19-21 for most of the ferment.
volume into the fermenter (with a far amount of kettle crap) was ~24.5L

the gravity has been steadily dropping for the last 2 weeks. 0.5-1 point a day otherwise i would have bottled it already.
last Thursday it was at 1.013
yesterday (Monday) it was at 1.010

i have tried a couple of the MJ's yeasts, and they are good. but there wasnt any regular ale yeast in stock :(
