What are the ideal temperatures?

Hi guys,

What temperatures are my max, minimums and sweet spots at these stages.

- fermentation
- settling (where fermentation has finished but the brew is not yet bottled)
- bottled

- fermentation - Depends on your yeast. Some ale yeast like to be fermented high, some like w1729 like to be down around 13-15*c, Lager likes to be cooler again
- settling (where fermentation has finished but the brew is not yet bottled).- Doesnt hurt to chill it to help it settle
- bottled - Somewhere cool.

Generally, keep everything under 20*c
 
Except for lots of Belgians, Saison and Hefeweizen.
Really you need to look at the beer you are making, choose a yeast and have a look at what the manufactured recommends, they will give a range i.e. US-05 is 15-24oC, at the lower end you get a slower ferment, lower ester and fusel production and less flavour, the opposite at the higher end.
It's a good idea to start near the middle of the range and from there work from experience.

It really depend on what breed of kitten you have in your airlock
