So I just picked up a pidgeon pair fridge freezer for a fermentation/keg/cold crashing combo. Sounded like an awesome plan. No wasted space like in a fridge-freezer combo, and able to fit two fermenters/multiple cubes/kegs in each fridge and can run a two temps as required. Got them home and opened up the freezer to discover the refrigerant coils run through and under every shelf and cannot be removed. Bugger!

That's the way pretty well all upright freezers are made.

Look on the bright side, you now own an awesome hops freezer.

Yup, i was looking for quite a while for an upright freezer with removable shelves.
not easy to come by, but are out there.

My upright freezer is my keezer. Having frost issues at the moment but has been running sweet for a couple of years.

Mine doesn't so they are about
Same. I think the ones without the coils in the shelves are called frost free? I have a 380L and 180L upright freezer with no shelf probs. Once you are aware you just need to check.

My up right freezer was the same. I carefully removed the cooling tubes from the shelves (they were held in by folded over metal tabs) and bent the tubes back against the back wall. They are soft and easy to bend. DON'T KINK THEM OR REBEND IN THE SAME PLACE!!!

I've done the same with bending freezer tubes to the back of the fridge in bar fridges to make more vertical room. Its easier than you think it will be, just go slow and steady, and you will be fine.
