I've recently got back into homebrewing after many years (which served a thrify uni student well) and started with a cider yesterday (Saturday).
I ended up using 8L of apple and mango juice which netted about 1.08kg of total sugars. I then added another ~250g dissolved sugar. I then topped up with water to 20L.
I've since seen a number of recipes which talk about using 18L or so of juice - which makes me wonder if I've significantly under-sugared (is that a word?) my cider; hoping for a mid or heavy % but not rocket fuel.
What do you think? Should I up the sugar or just leave it?
