I have a shed load of Munich malt left, and not much in the way of base malts (only 2kg galaxy left). I was thinking of doing a cupboard cleaner oktoberfest like this:

Doing a ******* lager (ie US05 fermented about 18 deg) because I don't have a brewing fridge and can't get down below 18 at the moment.

Is this too much munich?
Could you to a tasty brew with all munich?

Any other comments on the recipe would be appreciated.

Too much Munich for whom? I personally do not think you can have too much! You could make a beer with 100% Munich if you wanted... ;)
 
Looks fine.

You can do a stout or porter with Munich as base. Or a strong pale ale around 40 IBU. It will give a big malty backbone that will take plenty of hops.

If it is uncrushed, just store it somewhere cool and buy another bag of pale ale or pilsner malt.

Munich is kilned a bit higher than pale ale malt, has less diastic power (less enzymes) so don't ask it to convert much adjunct like flaked barley, wheat or rice.
 
once you use munich or vienna purely as a base malt... there's no going back... it's the slippery slope of malt addiction
 
What about an ALT beer

I'm doing one this weekend with about 70% Munich 1

i actually ran out of all my usual base malts the other day and stating starring at a 25kg bag of weyerman munich 1 B)

I used 2.5kg light munich as the only grain in my partial alt last october (plus the morgans extra pale malt extract).
It was deadset awesome.
