I have had my latest brew fermenting since last Friday (23/10). I was hoping to rack for the first time. I have read that you hould leave the primary fermentation for about 1 week. I decided to take an SG reading this morning (29/10 - 5 days) and to my surprise it read 1012. The brew is very cloudy so a second ferment would be good for it, I thought.

Is it too late for me to rack?

leave your beer in primary somewhere cool for two weeks

then rack to a 20L food grade plastic jerrycan and cold condition a few more weeks

the 2 weeks in primary will see your beer drop a lot of yeast, the yeast cake is cleaning up your beer and unwanted volatiles have a chance to permeate out the fermenter

you could leave that for another week and still be right to rack.generally for me its never to late to rack.
