Can anyone tell me how to find the grain temp. DO i just put my probe in the grain bed (no water) or do i cover it with water.

The equation for strike temp is

Strike Temp =

desired mash temp x (litres water+(0.4 x kg malt))(0.4 x kg malt x malt tmp)
--------------------------------------------------------------------------------------------
litres of water

I just go on ambient room temp of where the grain is stored....could be wrong.
Probing the grain without water would give you the grain temp
 
gotta agree with linz.where ever you are storing the grain would be equal to the grain temp.unless its wet/moist and kinda reacts like a big compost situation where it starts to heat up. :( hope not.
