I have just racked my brew to a settling cube which is a pale ale. Don't have time to bottle but wanted to get another brew on before I head away for the holidays. It has just come out of the fridge at 2 degrees. Do I keep it at room temp (brisbane) or keep it in the fermenting fridge at either 12 or 20 depending on what I try to brew next. Also, can I count this as maturing time ( so after I bottle wait two weeks and it is good to drink or still try to wait 4 weeks after bottling.

Why not put your cube in your food fridge while you are away and ferment in your fermenting fridge? Will be hard to say how much maturing time your planned beer will have, as you won't be home to test it to see when its actually finished.
 
Thanks. I guess my main question was what temp to store the cube. So keeping it at 2 degrees is best for storage.
 
Yeah mate. An extra 2 weeks of cold conditioning should produce a nice clean tasting beer and will ****** the growth of any nasties which may be in there. Should still be enough yeast to carb up when bottled.

My thoughts on this
I assume you are priming and bottle carbonating
Carbonation in bottle will need some time(and probably create some off flavours such as acetylaldehyde), then it can start cleaning up once carbonation is completed.
Refrigerating for a long period will drop yeast out of solution- which could affect bottle carbonation. If your just talking over long weekend I wouldn't be concerned though.
 
The cooler, the better. If you can store it at 12 and keep the lid tight, that will serve you well.
