So by extension, if I just want to use it as a thermometer at the moment, I could wire it like this, correct?

And if this is correct - the earth attaches to what? The case will be plastic.

If using a plastic box, the Earth would just terminate at the joiner.

I would still probably wire up an output while your building it. It's a lot easier when it already done and you want to use it for something.

My old one got used for over a year when I used to BIAB before actually getting something plugged into the outlet.

Yes, you're probably right. Besides, if my tempmate ever dies, it'll be ready to go without stuffing around.
