Anyone out there tried some colonial south west sours. I'm trying to get an idea as to the qualities of the hops they use. Planning to do a dry hop using what they specify online. mosaic, citra and kohatu. I was thinking less of the mosiac and citra as they are high in alpa acids compared to kohatu that is very low. What percentages do you think? The sour has low bitterness.
