ferment: pitch at 9 set fridge to 12 (with no heating), i think i did a 9l starter for this one i never write these steps down just use the yeast calc
this one tastes like out of the bottles, i recently tasted smokeys on tap up at matsos in june it was heaps darker and had more roastiness. Other variations i have done is with halving the midnight wheat addition and substituting med choc, tastes better but less like smokeys
also i have done it with other german lager strains and other than the time it took to mature it tasted pretty close
