Imagine using this plasma flashlight to sanitize everything in the brewery and not having to worry about using liquid sanitisers

Doubt it would be useful to sanitise a fermenter. But they do use UV in tubes to "sanitise" water. Often used in combination with partical filtration.
 
some breweries use ozone.. works great. has a very short half-life into non toxic products.

edit: UV santisation of water is by generation of ozone, btw. But it's more easily produced on demand by arc discharge I believe
