Saison Hops Drama

[Bada Bing Brewery]

Hops cockup. Just mashed in a Beglian saison. Went to get the hops ready (Saaz, EKG and Halletau Mittlefrusch) and buggar me I only have EKG. Changed fridges 2 weeks ago and they must have gone walkabout.
I have:
Tennang
Herbrucker
citra
NS
Galaxy
Rikawa
Wiaiti
Mt hood
Northern brewer
Cascade
Amarillo
B saaz

Ideas?? 21L batch - 70% Wey pils, 28% wheat, 2% Acid malt

If it were me id use tettnang in place of the saaz, and the Hersbrucker in place of the Halletau Mittlefrusch. Should be pretty close id imagine.

You could prob get away with almost any noble hops really.

I'd go with the Hersbrucker for the Hallertau (good replacement) and the Tettnang or the Mt Hood to replace the Saaz (less good replacement but still a fine hop to use here). Alternatively, just go with EKG. That will be fine as a single hop for a saison IMO.

I would use Northern Brewer and EKG. Saisons are not about the hops anyway.

That is what I was thinking - my choices are limited given my poor noble hops stash ...
I'll go the Mt hood option and save my Tettnang for the upcoming Kolsch
