Brewer's Notes
Simple Kölsch recipe building on the success of the last attempt at the NSW HB champs. Using a better yeast choice this time, a little more munich and less wheat.
Melanoidin & munich malt for some maltiness/malt aroma. Styrians, Saphir and Saaz for a nice hop bouquet.
WLP029 in 500mL->1L starter. Wyeast 2565, 1007 or WLP036 will also work.
'Spalter' is actually Saphir hops - not in the list.
Mash @ 64C for 45' (dry beta amylase rest) then raise temp with boiling water/heating to 71C for a dry alpha-amylase rest for another 45'. The long mash should ensure a highly fermentable wort.
