The Bays Big Barley Wine

Brewer's Notes

Did a 90min Mash on this Beer at 64c, Dry hopped with 15gr each of Chinook, Cascade, Columbus and Centennial after 7 days in Primary fermentation, will be in the keg for about 2 months before I gas it and CPBF it into bottles for ageing...

Once I had taken my 1st and 2nd Runnings to achieve my Pre-boil Volume, I then Sparged again with enough water for another seperate batch and added 15gr POR at 60min to make a Partigyle brew that came out at 3%, next time I would add 1kg Malt extract to that to boost it a little....

Would the US-05 have a hard time of getting to 1030? Doesn't seem like the best yeast for a Barleywine.

Mate,

I dumped onto a US-05 yeastcake and the OG was actually 1098 and it dropped down to an FG of 1013...... :super: Hungry yeast....

11.3% Alc too.... :icon_drool2:

good to hear. my hops for this arrived this morning. just need some golden promise now.....
 
MaestroMatt,

'Brewing Classic Styles' recomends US-05 as a yeast for a lot of their bigger beers.

Haven't used it on something that big, but with an appropriate big healthy starter, it seems to manage pretty well.

CB. would love to know what the POR Partigyle tastes like. was going to brew Doc Yardglass Lite this weekend but maybe i do the barleywine and Partigyle instead.

Do the Barleywine, I reckon it is well worth it, the small taste test I had the other day(100ml) make me a little light headed, this will be a brilliant Beer for a Winter nightcap... :icon_drool2:

The Partigyle came out about 3% and is Ok to drink but quite lacking, its probably ok to chill down and smash one back after Mowing or Sweating or something, even use it for Shandys for the Missus.... :unsure:

Maybe 1/2 to 1kg of LDM could be added to the Partigyle during the boil to Malt it up a little... And maybe Dry-Hop it aswell to get a bit more flavour... Ill be doing this next time!!!! (which will be soon)

Oh, and I brewed Docs Yardglass Lite on Sunday and put it in Fermenter this morning, unfortunately it came out at 1044, supposed to be 1038 so it wont be so lite, maybe I can halt the fermentation when it gets to a lite???
 
i might do this and throw some more fresh munich into the partigyle mash to strengthen that malt backbone. some POR and recultered coopers yeast might make a nice lawnmower as you said.

and it was a single infusion mash at 64C? too easy.

bugger just realise that im out of US05. i chucked 4th gen slurry i had last night. hmmmmmmm

Dave - you got any US05 I can beg/borrow/steal and culture up?

Maybe just do a seperate Mini Mash for it or just Steep some Spec Malt and add to the Boil....

Once you have the Goodness from the Grain for the Barleywine, the Grain then only needs another Batch Sparge with the amount of liquid you need for the Partigyle pre-boil volume... It could be a waste chucking Munich in there as you are only effectively rinsing the Grain of Whatever sugars are left in the Mash... ;)

your probably right about just using some extra spec malt rather than base. i still want it as a lightish beer. hmmm add some carraaoma or carared :icon_drool2:

thought i'd go big and make a double batch of this.but then i looked at the promash report....22kg of grain and 438g of hops. not sure i can handle that much hops in the kettle without a hopscreen.

A whole sack of Grain hey, you must have a massive Mash Tun....

Looks good mate, that will keep you stock for a long while, as I said, you dont need to drink much when its at 11.3% to get a Buzz.... Im going to bottle mine in 375ml Ginger Beer bottles for the Drinkers and Longnecks for the ones to Age and for QABC next year.. I will also get some cheese wax for the ageing bottles....

hmmm yeah well thats the other thing ive only ever had about 12kg of grain in the tun before. havent tried anything near 22kg. its a 50L tun minus a bit of dead space. god its tempting. 1 keg for drinking and 1 for aging.

not to mention i'd need about a 10L starter of us05! maybe i should leave this for next brew day as i havent even started cultering up US05
