Brewer's Notes

Yeast was Wyeast Belgian Saison.

BIAB, mashed for 90min at 63C, mashout at 78C.

90min boil.

For the benefit of all, having drunk this a number of times, my next version will use significantly less Vienna. The malty sweetness that comes through is too much, and the resulting beer lacks the proper dryness for the style.

I'm thinking my next version will me more like:

4.5kg Pilsner
0.5kg Vienna
1kg Wheat

The Vienna should add something subtle, and not dominate the finish as it does in the version I'm drinking.
