Brewer's Notes

Bring water to boil. Add hops and keep boiling ~20 - 30min.
Shut the heat off and add grains and sugar. Stir and put kettle somewhere where are good place to cool and ferment. Wait that log at the wort is ~ 35C and add backing yeast. If you use dry yeast half teaspoon is enough. Let ferment ~1-2 day. Strain off beer and bottling. After one day You can sample and taste. You can use more or less spices. First brew I use only one crushed Star Anise. That gives licorice like taste. And my hops are local hops.

X-mas Beer for the Finns. :p
It could be drunk in mid-vinter where outside temperature reaches well below zero.
All the herbs are used in baking cakes and cookies round this period.
Liquorice is a very popular in Finland and in the Scandinavian part of the world.

Looks similar to kvass in some ways, the baking yeast, unboiled. Is it a traditional style of beer in your area, Suorama? How does it taste?
