Brewer's Notes

This beer is basically a tribute to Brewdog's hardcore IIPA. It uses the same ingredients, and I've just used an educated guess as to additions. On their website they stated it was 150IBUs, beersmith gives me 100IBU for this one, but you could take it further, which earlier additions of Simcoe..

I left it to ferment for a month and then keg hopped it with 3g/L dry hops.
Needless to say with 250g in 20L its a pretty hoppy beer, and I'm really happy with it's balance.

If its your first time brewing a big beer like this, make sure to keep the efficiency around 10% lower then normal and use plenty of yeast and aeration.

NOTE:The 0min on the recipe are the dry hops I used.

27/12/11- Brewed, yeast pitched
16/1/12 - FG acheived and kegged.

1/5/12 - Taste really mellowed out, hops and malt balanced and alcohol taste disappeared.
10/5/12 - Amazing hop flavour coming through, malt really smooth and balanced. Really easy to drink and very moreish.

This beer has taken a long time to age, however I have to say that after the 5 months its been in my keg its developed awesomely. After the first month or so I was finding it hard to drink with alcohol taste and it wasn't in much balance but I'm really happy with it now and would definitely brew this one again.

Only thing I would do differently is use 5% of Crystal meduim and 5% caramalt to lighten the raisin flavours from the crystal.
