Brewer's Notes

I'd try dropping the late addition of Hops to a lower amount to let the yeast come through more next time.
Yeast = Wyeast 3724 Belgian Saison
Sugar was raw sugar (not white sugar).
My software predicted OG= 1.066, I got 1.062, efficiency was lower on my system.
Finished all the way down at 1003. Late hops almost masked any funkiness.

looks a nice recipe mate.

If you want a more ballanced hop character in a beer like this, try a single addition at 40 min next time and see how it goes.

Thats the plan. I read somewhere that saisons have late hop character... I liked it as brewed but have since tasted a few commercial ones, especially liked the prickly moses version, awesome funky one, going to try to get it closer to that one.
 
Yes the PM Saison is a damn fine beer!
 
Brewed a lighter Tony Style Summer Saison last week, 3.1 Kilo of grain for a 1 keg batch, got ~1033 OG @ ~20L. Bittered to 40ish IBU with Fuggles hops.

50/50 Pils malt and Wheat malt + 100g of Special B I had lying around.

Less than 1 week and it is done! 1004 today. Hydro tasted yummy :)
